INGREDIENTS
  • 100g unsalted butter
  • 70g diced onion
  • 30g diced red peppers
  • 30g diced green peppers
  • 1 tbsp minced garlic
  • 70g plain flour
  • 1 ltr water
  • 150g diced chicken breast
  • 1 tbsp cumin powder
  • 1 tbsp chili powder
  • 1 tbsp salt
  • 40g corn tortilla strips
  • 150g Tradition Mac & Cheese melt
  • 10g chopped cilantro

PREPARATIONS
  • Melt butter in a stockpot over medium high heat.
  • Add diced onions, diced red peppers, diced green peppers and minced garlic. Cook until tender and fragrant.
  • Add plain flour and cook until well mixed.
  • Add 1/3 of water while whisking continuously to avoid any lumps.
  • Add remaining water.
  • Add in chicken breast, cumin powder, salt, corn tortilla and shredded cheese.
  • Cook until well mixed, while whisking continuously.
  • Turn off heat and add in chopped cilantro.
