INGREDIENTS
50g fresh basil, stem removed
1 clove garlic
2 tbsp grated pecorino cheese
2 tbsp roasted pine nuts
2-3 tbsp Extra Virgin Olive oil
Salt to tast
Tradition mac & cheese melt as needed
Sourdough bread as needed
Unsalted butter as needed
PREPARATIONS
Add all pesto ingredients in a blender and blitz to desired texture.
Sprinkle tradition mac & cheese melt on two pieces of sourdough bread. Spread pesto over one of the pieces. Put the two pieces with the shredded cheese together.
Butter sandwich.
Toast sandwich over medium heat on a non stick pan until golden brown and crispy.
