INGREDIENTS

Dough

  • 1000g milk
  • 150g yeast
  • 2300g flour
  • 300g sugar
  • 300g egg yolks (15 pcs)
  • 35g salt
  • 20cl rum (optional)
  • 300g butter, room temp.
  • TINE® Brunost™ spread or slices

Sugar brine

  • 200g water
  • 100g sugar
  • 100g honey

PREPARATIONS
  • Mix all ingredients. Knead the dough for 3 min at low speed and 6 min at high speed, in a food processor.
  • Let rest for 15 min and then press the dough before letting it rest for another 15 min.
  • Roll to 3 mm thickness.
  • Add a layer of TINE® Brunost™ spread or slices.
  • Optional: Sprinkle chocolate pieces (be aware they might burn).
  • Roll and cut into 4 cm thick slices.
  • Put in a portion cake tin and let raise for 50 min at 38° C and approx. 75% moisture.
  • Bake in oven at 180° C for approx. 10 min, depending on oven.
  • Cool.
  • Make sugar brine: Bring all ingredients to a boil and cool down. Optional: Add flavor or spice after own wish.
  • Brush the rolls with your sugar brine after baking
