Found between the ribeye rack and the rump, the striploin is one of the most expensive cuts of beef but it’s cost effective in its own way: it requires very little intervention in the kitchen. It responds beautifully to quick cooking and, as it has a higher moisture content than tenderloin, it is best to undercook a little. Opt for medium-rare doneness.
